Russian River Sockeye Scramble

A little leftover Alaskan sockeye salmon grilled the night before. Crumbled into small pieces sauteed in a bit of butter with some white onion. Salt and pepper to taste. Whip in 3 eggs. Scramble. Serve with fresh scallions.
Eat Wild Salmon.
